    MEXICAN CROQUETAS DE ATUN RECIPE

    Croquetas de atún or Mexican Tuna Croquettes is a popular Mexican recipe for lent. Definitely, you cook them all year-round. I always trick the kids by saying they are chicken nuggets and they can’t even tell the difference, as long as the tuna patties have some ketchup on them. Croquetas de atún in English is actually a kind of Mexican tuna cakes and are super easy to make and very tasty!

    What are Croquetas de atún

    Croquetas de atún is a recipe made of a mix of canned tuna and boiled mashed potatoes to make a dough that is breaded and then fried. As you know I try to cook Mexican food in a healthier way and avoid frying more of my recipes. Many of my followers struggle with diabetes and follow my recipes to cook healthier. That is why I give you two options for these Tuna Cakes or croquettes: Fit croquettes or authentic Mexican Tuna croquettes as well as 3 options to cook them, frying, Air Fryer, or baked.

    HOW TO MAKE AUTHENTIC MEXICAN TUNA CROQUETTES RECIPE

    These tuna cakes are very simple to make and they only required a few ingredients. This recipe makes about 15 good size tuna patties.

    • Set two peeled potatoes to boil in water until cooked (it takes about 15 minutes)
    • Once the potatoes are cooked let them cold down a little bit and smash them.
    • Drain the water of the tuna cans

    • Chopp 1 spoon of parsley and 3 spoons of scallions or green onion very finely (you can use normal onion but scallions really give a nice flavor) and 1 teaspoon of minced garlic.
    • Mix the potatoes with the tuna two eggs and the rest of the chopped ingredients.
    • Add ½ teaspoon of pepper
    • Optional ½ teaspoon of Italian Herbs
    • Add salt to taste
    • Beat two eggs

    • Set a plate with 1 cup of flour and another one with 2 cups of bread crumbs
    • Create a patty with your hands using the mix of tuna and potatoes and pass it trough the flour, then bath it in the egg and after that bread it with the bread crumbs.
    • To fry the croquetas seting a good amount of oil in a pan and let it warm up. Add the croquettes leaving space between each other and cook for about 2 minutes on each side or until golden brown *instructions for air fryer and oven below.
    • Mexican croquetas de atún can be eaten cold or hot.
    • Have the with some mexican salsa roja and salad. Kids love it with ketchup!

    CROQUETAS DE ATÚN HEALTHY FIT RECIPE – LOW CARB

    To make a fit version of the croquetas de atún we are going to substitute the potatoes with requesón or low-fat ricotta cheese. The cheese is going to help us to glue the tuna. Ricotta will give us some extra proteins instead of the potatoes carbs.

    • Drain the water of the tuna cans
    • Chopp 1 spoon of parsley and 3 spoons of scallions or green onion very finely (you can use normal onion but scallions really give a nice flavor) and 1 teaspoon of minced garlic.
    • Mix ¾ of a cup of ricotta cheese or requeson with the tuna, add two eggs and the rest of the chopped ingredients.
    • Add ½ teaspoon of pepper
    • Optional ½ teaspoon of Italian Herbs
    • Add salt to taste
    • Beat two eggs
    • Set a plate with 1 cups of flour and another one with 2 cups of bread crumbs (you can substitue for oatmeal flour or almond flour)
    • Create a patty with your hands using the mix of tuna and potatoes and pass it trough the flour, then bath it in the egg and after that bread it with the cread crumbs.
    • You can either use the air fryer or bake the croquetas
    • Spray with cooking spray the croquetas on both sides.
    • Cook at 400 f for 2 minutes on each side on the air fryer or in the over at 400f for 10 minutes on each side or until golden brown.
    • Mexican croquetas de atún can be eaten cold or hot.
    • Have the with some mexican salsa roja and salad. Kids love it with ketchup!

    HOW TO COOK MEXICAN TUNA CAKE IN THE AIR FRYER

    • Set the croquetas inside the air fryer leaving some space in between them so the hot air can run through them.
    • Set the air fryer temperature at 400
    • Air fry for 2 minutes on each side or until golden brown.

    HOW TO OVEN BAKE CROQUETAS DE ATUN

    • Warm up your oven at 400f or 180c
    • Set the croquetas on an oven-safe tray. Make sure to use parchment paper or oil your tray.
    • Spray the croquetas on each side with cooking spray
    • Set them in the tray and cook the for 10 minutes on each side or until golden brown.

    FRYING PAN CROQUETAS DE ATUN

    • Heat a good amount of oil at medium-high heat.
    • Place the croquetas in the pan leaving space between them.
    • Cook for about 1 minute on each side or until golden brown
    • Get rid of the extra oil leaving the rest over a pieces of paper towel

    Equipment

    • Air Fryer optional

    Ingredients

    AIR FRYER

    • Set the air fryer at 400f for 2 minutes. Flip over the croquetas and cook for another 2 minutes or until golden brown.

    OVEN BAKED CROQUETAS

    • Set the oven at 400 f or 180c Place the croquetas on a try with pachment paper and bake for 10 minutes or until golden brown.

    • To frythe croquetas, set a good amount of oil in a pan and let it wamr up. Add the croquettes leaving space between each other and cook for about 2 minutes on each side or until golden brown
