CUPCAKES WITH BANANA AND BRAN
2 cups of wheat bran flakes
1 ¼ cups of almond milk
1 ½ cups of whole-wheat flour
¾ cup of stevia or sugar substitute
¼ cup of brown sugar
½ tsp of baking soda
1 tsp of baking powder
½ tsp of ground cinnamon
½ tsp of ground clove
1 tsp of fresh chopped ginger
1 pinch of salt
1 tsp of vanilla extract
⅓ cup of melted butter
⅓ cup of blueberries
1 cup of ricotta cheese
1 tsp of vanilla extract
¼ cup of stevia
3 drops of blue food coloring
1 drop of yellow food coloring
- Preheat the oven to 400
- Add the milk to the bran flakes to soften them
- Mix all the dry ingredients in a separate bowl: flour, stevia, brown sugar, baking soda, baking powder, cinnamon, clove, ginger and salt
- Mix all the wet ingredients in a separate bowl: egg, vanilla extract, butter
- Smash the banana into the wet ingredients
- Add the wet ingredients to the bran flakes and milk and mix well
- Mix the wet and dry ingredients together
- Add the blueberries and mix the batter well
- Line a cupcake mold and fill each well with batter
- Bake for about 25 minutes
- Blend the ricotta, vanilla extract and food coloring
- Frost the cooled cupcakes and add toppings
