CARROT CAKE WITH PECANS AND PINEAPPLE

This is a super easy, incredibly moist, and most probably the best carrot cake recipe you will find. I love to have a deliciously thick layer of cream cheese icing on top of my carrot cake with pecans and pineapple. I work full time, have two small kids and I am called an influencer. My life gets incredibly crazy and I might admit that I end up with Costco cakes over the table very often. My kids love to make a mess in the Kitchen… I mean! they love to bake with mom. It is clearly important to me to make my life the less stressful and most enjoyable I can! and that means simplicity! So I have figured out how to make the perfect homemade carrot cake with pecans with a simple Yellow Cake mix. You can use any vanilla or yellow cake mix.

Do you have pineapple in your carrot cake?

I do not know if this is a very Mexican carrot cake recipe, but we love to add a whole cup of a chopped pineapple can to the mix. This gives an extra dose of moisture to the carrot cake and gosh, it does bring some extra flavor. I also like to use pineapple juice instead of the water that is needed to prepare the mix. This adds some extra sweetness, moisture, and flavor.

HOW TO MAKE CARROT CAKE MIX BETTER?

Here are some of my tricks. For flavor and texture, I love to add pecans or walnuts, raisins, and pineapple along with the carrots. I love to be eating a homemade recipe of carrot cake and get a bite of those pecans or walnuts it just gives some extra interesting texture to the carrot cake. What makes the carrot cake moist is the oil, the eggs, and as I like to add pineapple and raisings along with the carrots that definitely brings some extra moisture.

WHAT INGREDIENTS DO I NEED FOR THE BEST HOMEMADE CARROT CAKE RECIPE

  • 1 box of yellow cake mix
  • 1/2 cup of vegetable oil
  • 3 eggs
  • 1 can of pineapple
  • 3/4 cups of pecans
  • 1/2 of raisins
  • 2 cups of grated carrot (about 2 big carrots)
  • 2 teaspoons of ground cinnamon
  • 1 bottle of cream cheese icing

HOW TO MAKE A CARROT CAKE STEP BY STEP

We are going to place the cake flour in a container and we are going to start by adding the following on top:

3 eggs, 1/2 cup of vegetable oil, 1 cup of syrup from the pineapple can (is basically all the juice in the can), 1.5 teaspoons of ground cinnamon

Mix everything very well. Until you won’t find any lumps.

Once the ingredients are all well integrated, we are going to add 2 cups of grated carrot, 1/2 cup of raisins, 1 cup of chopped pineapple..

Grease your cake pan. I like to use vegetable oil in the spray.

We are going to mix all the ingredients and place on two bases to bake in equal parts. You can put it in the same container without any problem

Bake at 350 Fahrenheit, 160 Celsius for about 30 minutes.

From minute 25 check that it is not ready to get. It usually lasts longer than what the mix box instructions point because we added other ingredients that provide extra moisture, such as carrot and pineapple.

You will know it is ready when you can stick a knife in the middle and it comes clear, or almost clear as we have pineapples and raisins on the way!

Make sure to let it cool very well before decorating or the frosting will melt..

HOW TO DECORATE A CARROT CAKE WITH PECANS OR WALNUTS

There is absolutely no better icing for carrot cake than cream cheese icing. I just buy the one that is already made and if I want to bring some extra flavor I will beat the store-bought cream cheese frosting with a teaspoon of lemon juice and magic is done! everybody will be asking for the recipe for the most amazing and delicious homemade cream cheese frosting! really, my trick for having everyone asking for my recipes is to mix natural ingredients to store-bought cake mixes and frostings. Decorated my carrot cake with pecans and a some grated carrot. Only use the grated carrot on top if you are eating eat the same day, the other way they turn black. I also added a couple of leaves of fresh mint and of course a cherry on top.

CARROT CAKE DOES GET BETTER WITH DAYS

You can let the carrot cake sit overnight unrefrigerated if it is not a hot room temperature. I have found out that carrot cake just keeps on getting better as the days pass by. Well, I can only tell you for the 2 days that is the most it last in my home…
