Chili beans is one of those great comfort foods that you definitely need to have a go-to recipe for.  This is a 100% from scratch recipe that I know you will absolutely love it.  Interestingly enough, I developed this recipe by request.  It is extra special for me because it was inspired by one of my followers.  My special blend of chilies and spices are what add a delicious Mexican twist to this classic recipe.

The best and most tasty part of this chili beans recipe is the sauce.  The delicious sauce has guajillo peppers, garlic, cumin and oregano.  All these ingredients add depth in flavor that is to die for.  Guajillo peppers have a deep smoky flavor that is intensified by the cumin and oregano.  These spices add vitamins and antioxidants to the sauce.   The garlic in the sauce is the perfect touch that makes it complete.  Did you know that garlic has antibiotic properties?  It is also great for helping you get quality sleep.  Guajillo is not a very spicy pepper, but if your sauce is a bit too hot, you can always add a couple of tomatoes to make it milder. The special sauce I make is also full of juicy tomatoes and onions that make it extra chunky and delicious.

I make my beans separately and cook the ingredients all together at the end to infuse them with the most flavor.  For best results, soak the beans over night before cooking them.  You can also soak them an hour or two before to reduce the cooking time.

This chili beans recipe is great for parties, gatherings or a simply hearty dinner.  I enjoy my chili beans with a couple of corn tostadas, but you can enjoy yours however you like.  You can serve them with chopped onions, cilantro, low fat cheese or plain yogurt instead of sour cream.  I hope you enjoy this recipe and feel inspired to make more healthy meals in your kitchen with these great ideas.

4 cups of pinto beans

12 cups of water

¼ of an onion chopped

1 garlic clove

1 red chili pepper



12 guajillo chili peppers

1 cup of soaking water

1 garlic clove

½ tsp of cumin

½ tsp of oregano

½ tsp of salt

1 pinch of ground clove

1 tsp of oregano

Salt to taste

4 chopped tomatoes

¼ of an onion chopped

½ pound of lean ground beef


  1. Rinse and clean the beans thoroughly
  2. Add the chopped onion, garlic, chili pepper and salt to the beans
  3. Boil the beans on high heat and once they boil cook on low heat for 2 ½ hours
  4. Remove the stems and soak the guajillo chilies in hot water for 5 minutes to soften them
  5. In a blender, mix the guajillo chilies, 1 cup of the soaking liquid, garlic, cumin, oregano and salt
  6. Strain the sauce
  7. Put the sauce in a pot with the clove, oregano and salt to taste
  8. Add tomatoes, onion, and beef to the sauce and cook for about 15-20 minutes
  9. Add 4 cups of cooked beans and 2 cups of the bean stock to the sauce
  10. Cook the chili beans and sauce for an additional 10 minutes
