Quesadillas are a simple and healthy meal to make any time of day in just minutes.  I just love this recipe, it reminds me of my childhood, my father just to make this for dinner very often.  He used to deep-fry the quesadillas, but we are going to make them with a healthy twist!

These Quesadillas are great at any time of the day. The best part is that this is a very complete meal as you have protein, calcium, carbs and vegetables. For kids, just add a cup of milk and a fruit and you are all set with a healthy lunch, dinner or breakfast!

For my pico de gallo salsa, we are using a jalapeño.  Remember that the spiciest part of a chili pepper is the vein and seeds.  This is good to know when preparing your sauces and salsas because you can make is as spicy or as mild as you want.  If you want a mild flavor, try to use as little of the vein and seeds as possible.  If you can handle hot and spicy flavors, use the whole chili pepper.  A great way to tell how spicy a chili pepper is is by cutting a piece off and smelling it.  If it smells spicy, it is!

Pico de gallo is a great way to add vegetables to your meal.  The tomatoes are full of lycopene and vitamin C-great nutrients for vision and immune health.  The onions are antibacterial and help the immune system as well.  Jalapeño has capsaicin, which has been shown to be helpful in losing weight.  I also like to add a cactus salad to this meal, which is great for digestion and detoxification.  The last touch of Mexican flavor is a helping of beans, which are full of iron and fiber.

You can enjoy your quesadillas for any meal of the day and with whatever kind of cheese you like.  Melty cheeses work best for this recipe.  I used Chihuahua cheese, but you can use Monterey Jack, Mozzarella or any melty cheese that you like.  I hope you love these quesadillas as much as I do.

1/4 onion

2 tomatoes

1 jalapeño

1 pinch oregano

Salt to taste


Chihuahua cheese


  1. Dice the onion, tomato and jalapeño
  2. Put the vegetables in a pan with salt to taste on medium heat until they sweat, then remove from heat
  3. Warm the tortillas before adding cheese to one tortilla
  4. Place the other tortilla on top like a sandwich
  5. Halve the quesadillas and pour a hot spoonful of salsa over them
  6. Serve with cactus salad and beans
