Popular Torta fillings
Tortas are made with all kinds of fillings. I am using ham and cheese for this torta de jamon con queso just like el Chavo del Ocho used to crave all the time. You can have torta de barbacoa, torta de jamón, torta de lomo, torta de milanesa, torta de asada. You can really go crazy with what you want to be the main protein but I will really recommend you make torta de barbacoa! Barbacoa is a Mexican shredded beef that is the perfect filling for tacos, burritos, and tortas! here is my recipe to make Authentic Mexican Barbacoa.
- Ham and cheese
- Barbacoa (Mexican Pulled beef)
- Milanesa (Breaded steak)
- Lomo (Pork loin)
- Huevo, scramble eggs with ham, chorizo or pico de gallo.
- Tamal (Yes, dough inside dough) this are called gGajolotas and is a popular breakfast in Mexico City.
- Bacalao (Tortas de Bacalao are super popular during Christmas and New Years season)
- Arrachera, skirt steak also known as asada.
Step-by-step guide to making a torta
If you want to go to the decadent Mexican restaurant Style Torta you need to spread some butter on the bread! I have enough with the mayo as I feel is too much fat having butter and mayonnaise but most street food tortas will be spread on the bread rolls with butter on both sides! So it is up to you.
- Cut the bread length wide.
- Spread mayonnaise on both sides.
- Warm up the bread on a griddle on both sides allowing the side with the mayo to toast a little bit.
- On the bottom bread roll side spread some fried beans, and on the top side spread smashed avocado.
- Add your favorite torta filling on top of the beans, you can make it with barbacoa, ham and cheese, milanesa! I give you a list later on this post.
- Add slices of tomato, shredded lettuce, and onion along with some slices of pickled jalapeno or hot sauce on top of the filling.
- Finally, close the sandwich and enjoy! With the right ingredients, Mexican torta de barbacoa sandwiches can be an incredibly tasty and satisfying meal.
What is a Mexican Torta?
Torta is a Mexican sandwich usually made with bolillo or pan frances. Popular fillings are ham, milanesa, or barbacoa but there is an infinity of fillings for tortas. Most states of Mexico have developed their very own torta recipe. In Guadalajara Torta ahogada is a delicatessen. Tortas ahogadas are filled with Carnitas (Mexican pulled pork) and then bathed in a sauce made of tomato and chilies accompanied by tons of pickled onion.
There are hot and cold tortas, Cold tortas are usually made of ham and cheese!
Tortas sandwiches have several ingredients that make them so special like avocado, beans, mayo, and chiles or salsa! Torta food is common in school lunches for children in Mexico. Mexican moms prepare them for picnics and are a must if you are traveling and need to eat in the car. This sandwich is also a popular Mexican street food. You can find the on-street stand and as well as burritos, tortas are the perfect meal on the go.
What is on a traditional authentic torta?
- Bread: telera, bolillo rolls, pan frances. something very similar to all of this that you can find anywhere is ciabatta.
- Mayonnaise
- Butter *optional
- Avocado
- Refried beans
- Tomato
- Onion
- Shredded Lettuce
- Cheese, you can use queso fresco, American cheese, Oaxaca cheese, Chihuahua, or any melting cheese.
- Salsa or Mexican pickled jalapenos or serrano
My favorite fillings are barbacoa, ham and cheese, and milanesa.
What kind of bread do I need?
Tortas are made of different kinds of bread depending on which part of Mexico you are in. I am from Chihuahua, Mexico and we always use bolillo bread but people from Guadalajara and the south of Mexico will for sure use telera roll, and people from Durango and Torreón might go for Pan Frances.
- Bolillo is soft on the inside with a little crusty outside. They are a little wider than teleras and are very popular in the north of Mexico.
- Telera is a little narrower and flattener than bolillo, the outside is softer and it has just a small sense of being a sweetness.
- Pan Frances is more similar to baguette as the crust is more crusty than bolillo and telera.
The truth is that these three options for tortas bread rolls taste very similar, I would go for bolillo as it is wider and is easier to keep the filling inside. Bolillo is just in the middle of Telera and Pan Frances rolls.
How can I substitute Mexican bread for tortas?
If you can’t find bolillo, pan frances or telera you can make a torta with ciabatta, french rolls, french baguette, or even a sub sandwich bread.
Torta meaning
The torta Mexican is a sandwich. In most of South America and in Hispanic countries torta is a birthday cake! In Spain, it is an egg omelet! so be sure to know what kind of torta you are looking for!

Ingredientes
- 2 slices onion
- 3 slices tomato
- 3 tablespoons avocado
- 3 tablespoons Fried beans
- 1/4 cup chredded lettuce
- 2 tablspoons hot sauce
- 2 slices ham
- 2 tablespoons Mayoneisse
- 1 piece bolillo, telera or French Bread
- 2 slices cheese
Elaboración paso a paso
