Picadillo is a very traditional recipe of Mexican cuisine. This Mexican Healthy picadillo recipe has tons of veggies and a secret to substitute potatoes for people with diabetes or on a low-carb diet. What I love about this picadillo with chile poblano is that is the perfect way to have a meal full of vegetables and be satisfied without eating too much meat as the veggies help you to have a huge plate that is actually very healthy. You can substitute the poblano pepper for serrano if you like spicy or slices of seedless jalapeno if you like more mild savor.

Ingredients
To make the Easy Picadillo recipe you will need the following ingredients. There are many picadillo recipes, I like this one with poblano pepper as it does not turn out spicy.
- 1 teaspoon of minced garlic
- 3 poblano pepper, roasted, skinless and seedless cutted in squares
- 2 cups of chopped tomatoes
- 1 ½ cups of chopped onion
- 1 tablespoon oregano
- 1 teaspoon cumin
- ¾ teaspoon of salt
- 1.3 pounds or 600 grams of ground beef.
- 1 tablespoon vegetable oil, I use avocado oil
- 2 cups of peeled and chopped Mexican chayote (option fo people with diabetes) or potatoes for traditional picadillo recipe.

How to make Picadillo Beef – Peccadillo
- In a pot add ½ cup of water and the chayotes (peeled and chopped in squares), cover, and steam for about 10 minutes in medium heat (same process if you are using potatoes)
- In a pan add 1 teaspoon of vegetable oil, I am using avocado oil. Let it warm up, add then add garlic, saute for a few seconds, at medium heat. Add the onion and saute until the onion starts changing color.
- Add the ground meat and on top the oregano, cumin, and salt.
- With the cooking shovel, cut the meat into small pieces while it is cooking and mix together with the vegetables.
- When the beef is medium-well or almost totally cook add the tomatoes, the poblano, and the chayote or potatoes.
- Stir all together and then cover and let it steam all together for about 8 minutes or until the beef is completely cooked.
- You can have the picadillo in tortillas like tacos or with some Mexican rice or even on top of a tostada with avocado!

Picadillo Tacos
To make Picadillo Tacos you need to warm up the tortillas and keep them warm. Here I share some ways to warm up tortillas. Prepare the picadillo and then fill the tortillas inside with the ground beef. Usually, the picadillo is served on a plate and each person will make their own tacos as they are eating another way the tortilla will get wet and is going to break when you try to eat it. Of course, you will definitely need a really good salsa! here are some options.
Which Sazon for Picadillo
You can make your own all-natural Mexican Sazon for Picadillo. Mix 1 tablespoon of oregano with 1 teaspoon of cumin and ¾ teaspoon of salt for every pound of beef for Carne de picadillo. What also gives a lot of flavors, season, is adding garlic and onion when cooking the beef.
