    LOW CARB BREAKFAST FOR DIABETES AND KETO

    I have you a delicious and easy low carb breakfast for diabetes and keto. This breakfast recipe is perfect for people who have diabetes or are on a keto or low carb diet. It is a complete and nutritious breakfast that will help you control hunger throughout the morning and keep your blood sugar levels regulated. How would you get some fried eggs with a good spicy red sauce and some nopalitos covered with avocado? Avocado toast is super in fashion and this is the low-carb version, very Mexican. Remember that nopales are super nutritious, full of fiber, which will help you relieve constipation problems.

    Speaking of ingredients for low-carb breakfast, I want to introduce you to your new best ally: Los Nopales. Nopales are one of Mexico’s gifts to the world. They have a large amount of soluble and non-soluble fiber. They help digestion, keep you satisfied throughout the day and the best news is that it is scientifically proven that they help control glucose levels. You can find nopales in most of the super Mexicans. They are a very inexpensive element, it grows in the yard! So it is part of the basic diet of Mexican homes

    What Ingredients Do I Need For A Nutritious LOW-CARBOHYDRATE Breakfast?

    • 1 nopal stalk
    • 2 eggs
    • 1 pinch of salt
    • 1/4 of Avocado

    You Can’t Miss The Sauce For The Starry Eggs!

    This recipe is accompanied by a delicious chile de arbol sauce, be careful because the chile de arbol can be too spicy, so use the amount of chilies you prefer, I use between 5 and 7 and it is very tasty without being overly spicy. The ingredients are:

    • 6 chile de árbol
    • 3 tomatillos
    • 1 garlic clove
    • 1 tomato
    • 1/4 tsp salt
    • 1 tsp olive oil (optional)

    Nopal Tostadas with Avocado and Starred Eggs

    To begin we are going to take our nopal and we are going to place it on a grill or a comal at medium temperature and we are going to let it begin to cook, you can crush them a little so that they are toasted well. Here in the United States you can find them in Mexican supermarkets.

    You will know that the nopal is cooked when you turn it over and see that the color has changed even olive green, approximately 4 minutes on one side and another 3 minutes on the other side.

    When ready, serve on a plate and add avocado on top, then add the fried eggs.

    How Is The Arbol Chili Sauce Made?

    Place 1 tomato and 3 tomatillos to boil in a pot with water, let them boil until cooked, it will take about six minutes.
    I have 6 arbol chiles here, if you don’t want it so spicy, we are going to put less chili peppers, I am going to roast them, I am going to put them here on the grill, this helps you release a special oil that gives them much more flavor to the sauce, do not let them toast for a long time or they may burn you, about three seconds only.
    We are going to take our vegetables and remove the skin from the tomato, we are going to place this in the blender; the tomato and tomatillos, a large clove of garlic and I’ll add salt to taste and the chilies. Blend until the consistency of sauce.
    Put a splash of olive oil in a pot and we are going to put our sauce there, it is important that the sauce after blending, let it boil for about 3 minutes. This helps the flavors come together.
