    Mexican Cauliflower Rice Primavera Recipe

    The cauliflower rice Primavera recipe has been my best way to make my children eat veggies without even noticing. I have made the cauliflower rice as a Mexican Arroz Rojo recipe as well as a version of Mexican riced veggies with Poblano. So I have many cauliflower rice recipes to choose from. This cauliflower riced veggies Mexican Primavera has corn kernel, peas, green beans, and carrots as Mexican rice has.

    How to make Cauliflower rice taste Good

    I first tasted this recipe at my prima Luisa home. It was the best Cauliflower rice Mexican I have ever had. Making this veggied rice tasty is easy adding some Mexican flavors and of course, butter makes a good trick for this Primavera rice. The Primavera recipes are known in Mexico for the mix of carrots, peas, corn, and green beans with butter on chicken, rice, and even pasta! pretty much the Primavera recipes consist of butter and those veggies. Although primavera means Spring in Spanish. I suppose it is called primavera for the colorful meals you get with the mixed vegetables.

    How to Make cauliflower rice

    • Place a pot over medium heat and allow it to heat up.
    • Add 1 and ½ tablespoons of butter and let it melt.
    • Add ¼ cup chopped onion and ½ teaspoon minced garlic and once they change color add the grated cauliflower.
    • Mix and allow it to cook, you have to be stirring from time to time for around 4 minutes.
    • Add the pre-cooked vegetables and mix again. Allow them to catch the heat and add salt to taste, I add ¼ teaspoon of salt.
    • Finish cooking the vegetables along with the cauliflower for another 3 or 4 minutes or until you see that the cauliflower already looks cooked.
    • It is important that if you are using frozen mixed vegetables they need to be unfrozen when you add them to the cauliflower.

    INGREDIENTS TO MAKE MEXICAN PRIMAVERA VEGGIED RICE

    • 4 cups of grated cauliflower, you can use the frozen cauliflower rice for this recipe.
    • 1 cup of mixed vegetables, I recommend the ones that come frozen, but you can always use a can of mixed vegetables.
    • ¼ cup chopped onion
    • ½ teaspoon minced garlic
    • 1 ½ tablespoons of butter
    • ¼ teaspoon salt

    Cauliflower stir fry with butter and veggies

    This Mexican cauliflower rice recipe could easily be a cauliflower stir fry rice, only exchanging the oil for butter that gives such a nice taste to the cauliflower. It is important while making this recipe that you stir constantly to cook evenly and not get the cauliflower rice to burn out.

    How to unfreeze frozen Mixed Vegetables or Mezcla Campesina

    Place the vegetables in a container with water at room temperature. Give it around two minutes to start unfreezing, mix so that the ice can break, and change the water. allow unfreezing until you need to add them to the cauliflower rice.

    You can easily get the grated cauliflower rice at the Costco freezer section as well as pretty much all major supermarkets. You can easily make your own cauliflower rice from a fresh cauliflower.

    How to make your own cauliflower rice like the one that is sold frozen.

    Take a fresh cauliflower and get rid of the leaves. Use a cheese grated to grate the cauliflower or use a food processor. It won’t take you longer than 5 minutes to grate a whole cauliflower.

      When I made this cauliflower rice recipe. My children did not even realize it was not real rice!! These riced vegetables are the perfect way to sneak a big portion of veggies in your meals! I loved it with an over-easy egg on top!
