    QUESADILLA WITH CARROT

    This yummy quesadilla with carrots is a great way to introduce your kids to vegetables or just add some nutrition to your meal.  This quesadilla recipe combines sweet and savory flavors to make this Mexican classic a healthy meal.  You can make this quesadilla in just 10 minutes and enjoy it any time of the day.

    Quesadillas are a fast and easy meal when you are out of time or on the go.  With this recipe, you can make them a healthy meal by adding a few ingredients and a minute or two to your prep time.  I use shredded carrot and chopped onion to make this a nutritious entrée.

    We all know that onions have antibiotic properties, but did you know that carrots do, too?  They are full of vitamin C and that healthy crunch means they are full of fiber and antioxidants.  Your grandmother probably already told you this, but carrots are good for your vision.  They are full of vitamin A help the function of the retina.  The high levels of beta-carotene in carrots have been shown to reduce the risk of eye problems such as cataracts and macular degeneration.  With all the healthy benefits of carrots, it is no wonder I have never seen a rabbit wear glasses!  All joking aside, Grandma was right.  Carrots are a kid-friendly vegetable that is good for them, too.

    You can use small corn tortillas to make this a lighter recipe, skim milk or low-fat cheese or serve it with a healthy green salad.  This quesadilla recipe is not only easy and delicious, but also versatile for your nutritional needs.

    Another ingredient that adds a touch of flavor to this quesadilla is the oregano.  It has a deep floral quality that is just enough to bring out the sweetness of the carrots and onions as well as the saltiness of the cheese.  Oregano is a great way to add Mexican flavor to your dishes.  It has anti-inflammatory, antibacterial and antioxidant properties.  Some people even enjoy this herb as a hot tea.  Just a pinch adds a lot of flavor and nutrition to this fast and easy dish.

    QUESADILLA WITH CARROT

    BARRA INGREDIENTES

    4 corn tortillas

    1 cup of shredded cheese

    1 cup of shredded carrot

    3 tbsp or chopped onion

    1 tbsp of oregano

    Salt to taste

    directions

    1. Heat the shredded carrots and chopped onion in a pan until softened
    2. Add salt to taste and oregano
    3. Heat the tortillas and add cheese
    4. Add the cooked vegetables on top of the cheese
    5. Add more cheese over the vegetables and place another hot tortilla on top
    6. Halve the quesadillas and serve with salad and avocado
