    Chicken Salad with Rotisserie Chicken

    I work full time and some days I am just way too tired to start cooking for dinner. I always like to give my family natural food so I usually cook everything from scratch. My lifesaver is always the rotisserie chicken that you can buy already made in most supermarkets. My kids love this chicken salad where I add veggies and can be eaten with crackers or on Top of Mexican Tostadas. With the rotisserie chicken salad recipe, nobody will know that you did not cook the chicken and you will have dinner or lunch ready in less than 15 minutes.

    Start by defrosting 2 cups of mixed vegetables. I always have a big bag of frozen carrots, green beans, corn, and peas mix. I like to place them in a pot and cover them with water. Let them stand for a couple of minutes so you can get rid of the ice. Get rid of that water and place them back in the pot and cook them without the water for about 5 minutes. cover and cook at medium-low heat.

    Ingredients

    • 1 store bought rotisserie chicken
    • 2 tablespoons of mayonnaise
    • 1 tablespoon of mustard
    • 2 tablespoons of Greek yogurt
    • 1 tablespoon of natural honey
    • 2 cups of mixed veggies (carrots, green beans, peas, corn)

    How to make rotisserie chicken Salad step by Step

    • Place in the blender
    • 2 tablespoons of mayonnaise
    • 1 tablespoon of mustard
    • 2 tablespoons of Greek yogurt
    • 1 tablespoon of natural honey
    • Blend all together.
    • Now get rid of the chicken skin and shred it.
    • Add to the mixture we have in the blender.
    • After the veggies are cook place them in a new container along with some ice cubes and water to cool them down. Get rid of the water and place the veggies mix on the chicken.
    • Mix all together and time for dinner!

    My kids adore this recipe and it makes me so happy to have a fast, delicious, and still healthy dinner for my family.
