Easy ricotta cheese tacos for a Mexican breakfast, lunch or dinner! This is super easy to do and is ready In less that 10 minutes. The original recipe is tacos de requesón recipe.
Requesón is a Mexican cheese made with what is left after creating more creamy fatty cheeses such as Chihuahua or Manchego cheese. Requeson is a low fat Mexican cheese with a very similar flavor to skinny ricotta cheese.
I love to add cebolla de chambray to the requeson as it gives it a delicious flavor.

Ingredients:
3oz ricotta cheese or requeson
1 chambray onion
2 tortillas
Spray cooking oil if you want to make crispy tacos.

How to make Mexican tacos de requeson
- Warm up the tortillas in a griddle.
- Mix the ricotta cheese with one chopped chambray onion.
- Add half the mix in each tortilla and fold.
- Let the cheese warm up and the tortilla crispy a bit.

How to make crispy tacos de requeson
To make tacos dorados de requeson without all the fat spray the tortilla on both sides with cooking oil.
Let them crisp on the gridell for about 6 minutes on each side.
You can also use the air fryer if you have one.
Add some salsa on top! I love to have some nopal Cactus salad on side.
