These Mexican Tuna Sandwich Bread Rolls are the perfect recipe for a fast lunch or even dinner! I love it on summer days and even bring them for picnics. The secret and what makes this Mexican tuna recipe different is that it is made with a mix of greek yogurt, mayo and pickled jalapeno juice which really gives it a really wonderful taste and also helps to keep it as healthy as possible. For people with diabete or making Keto you can substitute the bread for some lettuce and make lettuce Mexican tuna rolls instead of using bread. If you are using bread, always choose the whole wheat option.
Ingredients
This makes about 7 tuna rolls
- ¼ cup jalapeno vinegar juice
- Lettuce
- 2 tuna cans
- 3 tablespoons greek yogurt
- 2 tablespoons mayonnaise
- Whole Wheat Bread slices

How to Make Mexican Tuna Bread Rolls
- Start by putting the bread edges. I do this for the kids. If I am making the tuna rolls for myself I just leave the bread edges.
- I put a plate upside down, put the bread in the middle and then flatten it with another plate to flatten the bread.
- In the blender place the mayonnaise, Greek yogurt, the pickle jalapenos juice, the tuna and blend. If you want it to have a spicy flavor, add a couple of slices of jalapeño.
- Blend until it becomes a paste.
- Spread the tuna on the bread and place a slice of lettuce on it. I cut the lettuce to make it the size of the bread.
- Now roll up the bread as if it were a burrito and that’s it!
- If you have trouble keeping them rolled up, secure them with a toothpick.

In Mexico we celebrate the lent, most people is catholic so this is one of the biggest commemorations of the year. On Fridays and Ash Wednesday we do not eat chicken or beef so it is always fish and tuna is a great option to prepare a fast and delicious lent or cuaresma recipe.
