    TURKEY CHORIZO – FROM SCRATCH

    Chorizo is a great way to add flavor and spice up many dishes. It is a mix of meat, herbs and spices that act more like a condiment than a stand-alone dish. This recipe will show you how to make a delicious low-fat chorizo out of turkey meat. Enjoy this yummy chorizo recipe and add it to any breakfast, lunch or dinner.

    Chorizo is a traditional sausage that goes back centuries. It can be found in many parts of Latin America although its origin is Spain. It consists of meat, herbs and spices mixed and stuffed into a casing. Spanish recipes call for white wine among other ingredients in the mixture and most chorizo is hard cured or aged served as a sliced sausage.

    There are many variations of traditional Spanish recipes throughout Latin America to this day. Mexican chorizo is especially delicious because it uses native chili peppers and spices as well as vinegar in the place of white wine. This mix of ingredients gives the chorizo a unique spice and a tangy kick that is like no other recipe. Another difference is that this chorizo is not hard but more like a soft paste. Once cooked, all of the fat melts and the meat breaks apart. This is the perfect condiment to mix with scrambled eggs, potatoes, beans and stews.

    Although the traditional recipe uses pork meat, we are substituting it with turkey. Believe me, the blend of herbs and spices with that generous splash of vinegar will give the meat so much flavor that you will not miss the original. This recipe gives you a way to enjoy a food that is typically unhealthy without guilt or remorse. The best part of all is that you still get that wonderful traditional flavor you crave with much fewer calories.

    Since this chorizo is surprisingly fast and easy to make, I like to prepare this recipe in large quantities and portioning it for different meals. All you have to do is dollop your desired serving onto a piece of plastic cling wrap and roll in the sides like a burrito. Finally twist the ends to make a neat little package and freeze.

    TURKEY CHORIZO

    BARRA INGREDIENTES

    1 pound of ground turkey
    4 guajillo chili peppers
    3 ancho chili peppers
    2 garlic cloves
    1 tbsp of salt
    ½ tbsp of paprika
    2 bay leaves
    ½ tsp of black pepper
    ½ tsp of ground cumin
    1 tsp of dried oregano
    1 pinch of marjoram
    1 pinch of thyme
    ½ tsp of ground clove
    ¼ cup of white vinegar

    directions

    1. Soak the chili peppers in hot water for about five minutes, just enough to soften them
    2. Use a blender to puree the softened chili peppers, spices and vinegar
    3. Use your hands to mix the spice mixture into the ground turkey
    4. Cover the mixture and let it marinate in the refrigerator over night for the fullest flavor
