Croquetas de atun recipe

Equipment

  • Air Fryer optional
  • Oven optional
  • Frying Pan optional

Ingredients

  • 2 potatoes
  • 2 tuna cans
  • 3 tsbp of scallions or green onion
  • 1 tbsp of parsley
  • 4 eggs
  • 1 tsp of pepper
  • Salt to taste
  • 1 tsp of minced garlic
  • 1 cup of flour
  • 2 cups of bread crumbs
  • ½ tsp of Italian Herbs

Instructions

  • Set two peeled potatoes to boil in water until cooked (it takes about 15 minutes)
  • Once the potatoes are cooked let them cold down a little bit and smash them.
  • Drain the water of the tuna cans
  • Chopp 1 spoon of parsley and 3 spoons of scallions or green onion very finely (you can use normal onion but scallions really give a nice flavor) and 1 teaspoon of minced garlic.
  • Mix the potatoes with the tuna two eggs and the rest of the chopped ingredients.
  • Add ½ teaspoon of pepper
  • Add ½ teaspoon of Italian Herbs
  • Add salt to taste
  • Beat two eggs
  • Set a plate with 1 cups of flour and another one with 2 cups of bread crumbs
  • Create a patty with your hands using the mix of tuna and potatoes and pass it trough the flour, then bath it in the egg and after that bread it with the cread crumbs.
  • To fry the croquetas , set a good amount of oil in a pan and let it wamr up. Add the croquettes leaving space between each other and cook for about 2 minutes on each side or until golden brown *instructions for air fryer and oven to follow.
  • Mexican croquetas de atún can be eaten cold or hot.

AIR FRYER

  • Set the air fryer at 400f for 2 minutes. Flip over the croquetas and cook for another 2 minutes or until golden brown.

OVEN BAKED CROQUETAS

  • Set the oven at 400 f or 180c Place the croquetas on a try with pachment paper and bake for 10 minutes or until golden brown.

FRY

  • To frythe croquetas, set a good amount of oil in a pan and let it wamr up. Add the croquettes leaving space between each other and cook for about 2 minutes on each side or until golden brown
