Mexican sopa de fideos with chicken

Ingredients

  • 2 garlic cloves
  • 5 tomatoes
  • 1 tsp of salt
  • 1 package of fideo
  • 1 tsp of olive oil or cooking oil
  • 5 sticks of cilantro
  • 6 cups of water
  • 1 chicken breast
  • parmesano or queso fresco optional

Instructions

  • Set 5 cups of water to boil and add the chicken along with 5 cilantro sticks ¼ of an onion, 1 garlic clove and ½ teaspoon of salt. Let ir cook for about 15 minutes or until cook.
  • In the blender place the tomatoes cuted in 4, one garlic clove, ¼ of an onion and 1 cup of water. Blend until liquify.
  • In a pot set 1 teaspoon of olive oil to warm up and once is hot add the tomatoe sauce. Let the tomatoes sauce cook in the pot for about 5 minutes. Stir once in a while.
  • In a pot add ½ spoon of olive oil and let it warm up. Add the fideos and stir constantly until the have a light golden brown color.
  • Separate the chicken and the sticks of cilantro, onion and garlic from the broth.
  • Add the chicken broth to the fideos and add the tomatoe sauce as well.
  • Let it boil for bout 8 minutes or until de fideo are cooked.
  • Shredd the chicken and add it to the Fideos soup.
  • Add salt to taste.
  • You can serve with some queso fresco on top or add some parmesano for some extra flavor.
