Set 5 cups of water to boil and add the chicken along with 5 cilantro sticks ¼ of an onion, 1 garlic clove and ½ teaspoon of salt. Let ir cook for about 15 minutes or until cook.
In the blender place the tomatoes cuted in 4, one garlic clove, ¼ of an onion and 1 cup of water. Blend until liquify.
In a pot set 1 teaspoon of olive oil to warm up and once is hot add the tomatoe sauce. Let the tomatoes sauce cook in the pot for about 5 minutes. Stir once in a while.
In a pot add ½ spoon of olive oil and let it warm up. Add the fideos and stir constantly until the have a light golden brown color.
Separate the chicken and the sticks of cilantro, onion and garlic from the broth.
Add the chicken broth to the fideos and add the tomatoe sauce as well.
Let it boil for bout 8 minutes or until de fideo are cooked.
Shredd the chicken and add it to the Fideos soup.
Add salt to taste.
You can serve with some queso fresco on top or add some parmesano for some extra flavor.
