Portobello tacos

Ingredients

  • 5 cups of chopped or sliced mushroom
  • 3 poblano peppers
  • ½ cup of chopped onion
  • ½ tsp of minced garlic
  • ½ tbsp of olive oil
  • 8 tortillas
  • 250 gr or 9 oz of melting cheese

Instructions

  • Start by warming up a pan and adding the olive oil
  • Once the olive oil is hot add the garlic and onion and sauté until the onion has changed color.
  • Add the mushrooms cut in slices or chopped
  • Add the poblanos cut in little squares
  • Cook stirring once in a while for about 5 minutes.
  • You will know that the mushrooms are cooked once they have changed color and had become smaller.
  • Add the cheese, turn of the heat, and cover the pan with a lid to let the cheese melt with the hotness that is already in the pan.
  • Warm-up your tortillas and fill them with the Mushroom, Poblano, and Cheese
  • Add your favorite Mexican Salsa for tacos on top! I give you some sugestions at the end of this post.
