Start by warming up a pan and adding the olive oil
Once the olive oil is hot add the garlic and onion and sauté until the onion has changed color.
Add the mushrooms cut in slices or chopped
Add the poblanos cut in little squares
Cook stirring once in a while for about 5 minutes.
You will know that the mushrooms are cooked once they have changed color and had become smaller.
Add the cheese, turn of the heat, and cover the pan with a lid to let the cheese melt with the hotness that is already in the pan.
Warm-up your tortillas and fill them with the Mushroom, Poblano, and Cheese
Add your favorite Mexican Salsa for tacos on top! I give you some sugestions at the end of this post.
