One day I read that mixing sweet with savory leads to a feeling of comfort and happiness. If that’s the case, be prepared to sit and enjoy a delicious pasta with all the necessary elements to surprise everyone at Thanksgiving dinner!

Thanksgiving is just around the corner and it’s time to start planning the menu. The turkey will be the main fixture that does not change, but side dishes are always a fun experiment for me. This year, I am cooking pecan chipotle spaghetti, a foolproof dish for kids and adults.

This is the third recipe that I have prepared for Barilla and I feel very proud to be a spokesperson for Barilla and their amazing pasta that allows me to create meals with a Latin twist. I love bringing a variety of recipes to the table created with high quality pasta that does not stick or clump and maintains a delicious flavor and consistency.

ESPAGUETI  LIGHT BARILLA

The recipe is very simple to cook. I’m providing a low fat version of this dish as I always try to do for my recipes. In this occasion I am adding the sinful -creamy- version in case you want to cheat and treat yourself on this special holiday.

The ingredients are simple and you probably already have them in your pantry:

Light version

-1 box Barilla® Spaghetti

-1 ½ cup peeled pecan

-1 ½ cup plain yogurt

-½ cup skim milk

-6 Chipotle chili

-1 cup Parmesan cheese

-1 garlic clove

-¼ cup water

-2 Pinches of salt

-1 Tbsp. brown sugar or sugar substitute

-2 Tbsp. chopped parsley

-½ Onion diced

Creamy version

-1 box Barilla® Spaghetti -1 ½ cup peeled pecan

-1 ½ cup heavy cream

-½ cup cream skim milk

-½ cup cream cheese

-6 Chipotle chili

-1 cup Parmesan cheese

-1 garlic clove

-¼ cup water

-2 Pinches of salt

-1 Tbsp. brown sugar

-2 Tbsp. chopped parsley

-½ Onion diced

Once it is all mixed, add the chipotle chilies, one by one. I used three chipotles, but maybe you like it less spicy so add one chili at the time, tasting after each one is added for the desired flavor.

mezclaOnce the mixture is ready, put it in a saucepan over low heat, do not boil, only slowly warm it. Once it is hot, add the cooked pasta and mix well. Keep it on a while on low heat while you prepare the onion with chipotle.

Cut half the onion in small squares (chop) as well as three chipotle chilies and place it in a pan with ¼ cup water. Cook the onion along with the chipotle. Stir until onions change color and add salt to taste.

Once your pasta is mixed in well with the sauce, place it in a container and add the chipotle on top along with the sautéed onions, some parsley and some parmesan cheese. This dish is surely going to make you hungry!
