Chicken salad with rotisserie chicken

  • 1 rotisserie chicken
  • 2 tbsp of mayonnaise
  • 1 tbsp of mustard
  • 2 tbsp of greek yogurt
  • 1 tbsp of natural honey
  • 2 cups of mixed veggies


  • Start by defrosting 2 cups of mixed vegetables. I always have a big bag of frozen carrots, green beans, corn, and peas mix. I like to place them in a pot and cover them with water. Let them stand for a couple of minutes so you can get rid of the ice. Get rid of that water and place them back in the pot and cook them without the water for about 5 minutes. cover and cook at medium-low heat.
  • Place in the blender: 2 tablespoons of mayonnaise, 1 tablespoon of mustard,2 tablespoons of Greek yogurt, 1 tablespoon of natural honey
  • Blend all together.
  • Now get rid of the chicken skin and shred it.
  • Add to the mixture we have in the blender.
  • After the veggies are cook place them in a new container along with some ice cubes and water to cool them down. Get rid of the water and place the veggies mix on the chicken.
  • Mix all together and time for dinner!
